A Professional Recipe for the Panasonic SD-PN100KXC Breadmaker

Introduction
This beautifully balanced tropical mini loaf brings together the warmth of dark rum, the creaminess of coconut milk, and the vibrant sweetness of Tesco’s Exotic Fruit Mix — all perfectly baked in the Panasonic SD-PN100KXC Mini Breadmaker.
Using the machine’s Raisin setting, the fruit is incorporated at just the right moment for even distribution and a moist, flavourful crumb. Whether served lightly toasted or warm from the loaf pan, this bake is ideal for relaxed breakfasts, afternoon tea, or campervan getaways.
Ingredients
Main Dough
Add these ingredients to the bread pan in order:
100 ml warm water
30 ml dark rum
30 ml full-fat coconut milk
1 tbsp olive oil or melted butter
1 tbsp honey or maple syrup
¼ tsp salt
200 g strong white bread flour
¼ tsp ground cinnamon (optional)
½ tsp active instant yeast
Add-Ins (to be added at the Raisin beep):
50 g Tesco Exotic Fruit Mix
Roughly chop large fruit pieces if needed. Do not pre-soak.
Method
Step 1: Load the Breadmaker
Layer ingredients in the bread pan exactly as listed above. Do not allow yeast to touch any liquid directly.
Step 2: Select Program
Choose the Raisin setting on the Panasonic SD-PN100KXC. This program is designed to pause at the correct moment for adding fruit.
Step 3: Add Exotic Fruit
When the machine beeps (typically 20–25 minutes into the cycle), add 50 g of Tesco Exotic Fruit Mix. Close the lid and allow the program to continue.
Step 4: Cool and Serve
Once baking is complete, remove the loaf from the pan and cool on a wire rack for 30–60 minutes. This allows the crumb to settle and slice cleanly.
