Infused with dark rum, coconut milk, sweet raisins, and juicy pineapple, this recipe is designed specifically for the Panasonic SD-PN100KXC Mini Breadmaker, using the Raisin setting to perfectly incorporate fruit and coconut into a moist, golden loaf.


Ideal for breakfast, brunch, or an indulgent afternoon treat, this recipe delivers both elegance and comfort in every slice.





Ingredients




Main Dough



  • 100 ml water

  • 30 ml dark rum

  • 30 ml coconut milk

  • 1 tbsp olive oil or melted butter

  • 1 tbsp honey or maple syrup

  • ¼ tsp salt

  • 200 g strong white bread flour

  • ¼ tsp ground cinnamon (optional)

  • ½ tsp active instant yeast




Add-Ins (added when prompted by Raisin program)



  • 30 g raisins

  • 25 g finely chopped dried pineapple (or well-drained tinned)

  • 20 g desiccated coconut



If using tinned pineapple, ensure it is thoroughly patted dry to prevent excess moisture in the loaf.





Method




1. Prepare the Dough



Add the base ingredients to your breadmaker in the following order:


  • Water, rum, coconut milk, olive oil, and honey

  • Then add the flour to cover the liquids

  • Sprinkle salt and cinnamon over the flour

  • Make a shallow well in the flour and add the yeast




2. Select the Bread Program



Choose the Raisin setting on your Panasonic SD-PN100KXC. This setting is designed to prompt you to add additional ingredients at the optimal point during kneading.



3. Add the Fruit and Coconut



When the breadmaker beeps (approximately 20–25 minutes into the cycle), add:


  • Raisins

  • Chopped pineapple

  • Desiccated coconut



Close the lid and allow the program to continue through kneading, rising, and baking.



4. Cool and Serve



Once baking is complete, carefully remove the loaf from the pan and allow it to cool on a wire rack for at least 30 minutes before slicing.
